Elizabeth Torres

Nutrition Science Student

Hi! My name is Elizabeth Torres and I am currently a Junior in the Nutrition Sciences program at UNLV. I aspire to become a Registered Dietitian in the next couple of years. Nutrition has opened a new world for me with many opportunities and feel tremendously grateful that I can pursue my passion. Nutrition is multifaceted and affects our physical, emotional and mental health. I would like to show people with my knowledge and skills that adequate nutrition not only can prevent disease but can help us thrive to reach our full potential in life. I have discovered a sense of purpose and I hope I can inspire people to live a healthier life. Some of my hobbies include cooking, reading, listening to podcasts, and traveling.

Margeaux Boudreaux

Nutrition Sciences Student

My name is Margeaux Boudreaux. I am a junior at the University of Nevada-Las Vegas, in hopes of becoming a registered dietitian after graduation. My passion for nutrition comes from years of experience in the medical field and healing my own ailments with food. I adopted a healthier more intentionally active lifestyle almost ten years ago and have been enjoying learning and evolving ever since. My goal is to team up with my fiancé post graduation to open a training facility where we can work side by side to give the best health and nutrition care to people seeking a healthier lifestyle as well.

Paula Arcila

Nutrition Sciences Student

I was born in Philadelphia, PA. but I was raised in Bogota, Colombia. I speak Spanish, English and currently learning Portuguese. I am extremely passionate for health and wellness in my personal life and I strive to incorporate it in my professional goals. I am studying Nutrition and Dietetics, as well as, Kinesiology. One of my main goals is to become a Clinical Nutritionist for young adults and to teach them the importance of leading a healthy life at an early age. By doing so, I could enable them to live healthier and more enjoyable lives.

Gizelle Navarro

Nutrition Sciences Student

My name is Gizelle Navarro, I am a Junior here at the University of Nevada-Las Vegas. I am originally from Mesquite, Nevada, graduated with the class of 2016 and decided I wanted to study nutrition. I originally wanted to be a veterinarian and help animals, but that changed because of my passion for food along with the help of my mom that made me realize that this was something I was really interested in.
On my free time, I enjoy outdoor activities like hiking, snowboarding, biking, rock climbing, you name it I just enjoy nature and the activities you can do outside. I also enjoy artwork, looking at it, participating in it, or just getting creative any shape or form that I can.
My goals after graduation, apply for an internship to receive my credentials as a registered dietitian. Then for the future, who knows. I have so many ideas and passions that I can tie into nutrition it is awesome, but I don’t mind starting slow and seeing what opportunities open up along the road.

Jennifer Barnum

Nutrition Sciences Student

Hello! My name is Jennifer Barnum and I am originally from Anchorage, Alaska, however now I call Las Vegas home. A few years ago I was fortunate to attend a nutritional science course which ignited my passion for dietetics, and my enthusiasm for food science. I changed my major from interior design to nutritional sciences, and now attend UNLV. I eagerly look forward to graduation and acquiring my credentials as a Registered Dietician. At that time I will be afforded the opportunity to pursue my desire to teach and motivate others to live a happier, healthier life through improved nutrition and physical activity.
